CrossOver 7.1.0 seems to use Wine version 1.1.6. There is a newer version 1.1.9 available on Wine HQ. Is it safe to just replace Crossover's Wine version with a newer one, or should I wait for an upgrade of CrossOver?

It is not safe usually. You're better of with waiting for a new CrossOver release.
I have discussed this somewhere in this forum some time ago(sorry, I have no link handy right now). If you are interested between the mechanics of Wine merges into crossover and how our Wine differs from mainline Wine, the search function may bring up my posting.
