Is there a way to convince Safari for Mac to open URLs in Crossover? For instance, if I go to the Steam website, and open a URL with a steam:// URL scheme, can I convince my Mac to open Steam in Crossover?

This should be doable. You may need to edit the generated Info.plist file for the Steam shortcut app CrossOver created to register the protocol steam:// as something it can handle. The Apple developer documentation on property lists will help. Once you do that, and double click the updated shortcut to register the changes with macOS, all browsers, not just Safari, will know what to do with steam:// URLs if they didn’t already.
