How can I install MS office 2007 once and have it accessible by all users of the system.
Currently, I have to install it for each and every user.

Make sure your installation of Crossover is system wide. For instance, if you use the bin file, you have to install with root priviledges. I believe the deb and rpm files are system wide by default.
To make your users capable of using the bottles, you can "publish" them so that they can use them. The publish button is in the advanced tab of the bottle management tool.
