water looks fine in ctf_2fort, cp/ctf_well, etc., however some maps, e.g hydro, show a flat blue surface instead.

This is a known issue. Framebuffer readback fails on some Macs in some situations. Where it exactly fails varies, but I can reproduce the issue with the G-Man intro in Half Life 2 and water in ctf_2fort myself. I did not try hydro yet.
I am investigating the issue and hope I have a fix soon.
