Yes. For the CrossOver application itself, you can just save the installer. You can also redownload it at any time from https://www.codeweavers.com/account/downloads/.
For the CrossOver bottles that you've created, your best bet would be to use the bottle archive feature of CrossOver to make backups. Then you can restore from those archives after you reinstall CrossOver. See http://www.codeweavers.com/support/docs/crossover-pro/officesetup.
