Go into your /Users/John/Applications/Crossover folder (this is a folder located inside your User's Applications folder - this is not the same place as the primary applications folder which contains iChat, iCal, Garage Band, and the Crossover applications, itself), find the launcher that you want to change, then right-click and select "show package contents".
The icon file is called "CrossOverHelper.icns", which is located inside Contents>Resources. Note that .icns files are fairly specific files, so just re-naming a given image won't give you a working icon. You can either copy in another .icns image (if you've got one), or create your own:

Note that the file must be called "CrossOverHelper.icns".
Got it to work first time. Thanks much.

Followed steps to change icons back to application icons and worked the first time. Thanks.

Easiest way to create Mac icons is with Apple's Icon Composer (free from the Apple's developer website). You just drag'n'drop your chosen image file into Icon Composer and voilà! Now simply replace your app's icns file within the Resouces folder. Works for all Mac apps.
